Vegetable Soup

200  grams mixed vegetables (beans, carrots, potatoes) finely chopped.
1  medium onion chopped
2  tablespoon butter
1  tablespoon maida
4  teacups milk
1  teacup water
salt and pepper to taste

  1. Boil the vegetables in water on medium heat for about 6  minutes or till tender and cooked.
  2. In a pan, heat butter on medium level for a few seconds. Add the chopped onions and fry for about 3  minutes or till onions are transparent.
  3. Add the flour and milk. Stir well. Now add the vegetables and water. Mix well and keep on medium heat for about 4  minutes. Season with salt and pepper.

Palak Soup


4  cups spinach leaves
2  cup water
1  onion chopped
1  cupmilk
2  tablespoon (maida)
1  tablespoon fresh cream
2  tablespoon butter
salt and pepper to season.

  1. Wash the spinach leaves and discard the thick stems. Boil along with the water for 8  minutes or till the spinach is well cooked. Cool and puree in a blender. Keep aside.
  2. Heat the butter in a pan. Add the chopped onions and saute on medium heat for 3  minute(s) or till the onions are transparent. Now, add the plain flour and fry briefly on low heat.
  3. Add now the spinach puree, milk, salt and pepper. Simmer on low heat for 3  minute(s).
    Add the fresh cream just before serving.

Dhal soup
Serves 2 

Ingredients:
1 fresh or canned tomato or 1 tsps tomato paste. 
½ cup toor dhal (Yellow lentils)
½ green chilli, sliced lengthways. 
½ chopped onion 
1 clove of fresh garlic minced
1 tsp salt 
½ tsp butter/ vegetable oil. 
½ tsp garam masala
½ tsp ginger minced
5-6 Fresh coriander leaves

Method of preparation: 

Wash the lentil in 4-5 changes of water. Drain and put them in a large pan with water to boil on a 
moderate heat. After they are soft, beat the lentils until they are smooth as paste.  
Add the tomatoes, salt and chili. Melt the butter or oil, and fry the garlic and onion gently 
until it is soft and then add the garam masala. Pour the soup mixture into serving bowls and 
add the fried mixture and discard the chillies before eating the soup.   

Hot & Sour Soup 

Ingredients

  1. French beans - 1/2 cup (finely shredded) Carrots - 1/2 cup (finely shredded)
  2. Cabbage - 1/2 cup (finely shredded)
  3. Coriander leaves - a few
  4. Cornflour - 4 tsp
  5. Vinegar - 2 tsp
  6. Soya sauce - 2 tbsp
  7. Pepper powder - 1-2 tsp
  8. Green chillies - 2
  9. Hot water - 6 cups
  10. Salt - to taste
  11. Oil - 2 tsp
Method 
  1. Grind green chillies & coriander leaves to a fine paste & saute in oil for 2 minutes. 
  2. Add the shredded vegetables, pepper powder 7 saute for some more time. 
  3. Add 6 cups of hot water, soya sauce, salt & vinegar & bring to a boil. 
  4. Mix cornflour in 1/2 cup of water & add it to the soup. 
  5. Stir constantly for 5-10 minutes.
Serve hot.
